Perfect Summer Fish Cake


After months of nothing but chicken for dinner, I’d had enough! I was in a desperate need for something different and delicious to break up my chicken run. Since there was nothing but frozen chicken in my freezer, I looked to the cabinet. Pasta possibly? Maybe some rice? That is when it happened! I noticed that we had 3 cans of tuna begging to be my dinner and who am I not to oblige? But what, besides tuna casserole or a tuna sandwich, does one make with 3 cans of tuna?

TUNA CAKES! And while I am well aware that it sounds unusual, they were out of this world delicious. I mean taste buds jumping out of my mouth to give me a high-five for doing such a good job. The recipe is so simple that you can even make these for lunch! Here’s what you will need:

2 Tablespoons Mayo

2 Tablespoons Mustard (I used the spicy variety because I’m sassy)

3 Cans of tuna

1 Cup bread crumbs + 1/2 cup

2 Large eggs

1/2 Onion chopped finely (optional)

1 Tablespoon of oil (your choice)

& here’s what you will do:

Put the 1/2 cup of bread crumbs on a plate and put it to the side. Dump the tuna into a mixing bowl along with the rest of the ingredients. While you are doing this, warm up your oil in a frying skillet on medium high heat. Form palm size patties out of your tuna mix and gently cover each side of the patty in the 1/2 cups of bread crumbs. Carefully place the cake in to your skillet and fry on each side for about 5 minutes or until golden brown. I squeezed a lemon over the top when all was fried and done but that step is totally optional.

These are great for those hot summer days that render you too exhausted to whip up a yummy dinner. Quick, easy, and mm mm good!
